We have a healthy valentines treat for your kids today! Chocolate pumpkin Butter cups! These are a yummy nut free option for any kid! Blending up nuts and seeds with dates has long time been a delicious healthy snack or treat for me and the kids. Much like a Larabar, they are dense with nutrients, and easy to take hiking or on the go. So, what better way to turn it into a true dessert, than to cover it in chocolate! Just in time for Valentines day.

Dairy Free

As with many recipes we experiment with on the blog, the kids got into the kitchen to help. We melt the chocolate using half power in the microwave, but you can definitely do it over a burner if you don’t like using the microwave. There are a variety of chocolate chips, depending on your families preferences. You can get some with very little sugar, some dairy free, and some vegan. While we actually have no dietary restrictions, I wanted to try a dairy free chocolate chips. We got this Dairy Free one “Chocolate Dream” at our local health food store. It was fine… just tasted like chocolate chips. Nothing weird. Once melted, spread the chocolate in any type of mold. We chose a silicone heart mold because it’s so close to Valentines day, and it was the perfect size! We put a small spoonful in the bottom, and simply spread the chocolate up the sides of the mold, to create a little bowl or cup of chocolate. Then, put it in the fridge to harden.

Nut Free

To make these nut-free, we used pumpkin seeds, and no nuts. While the chocolate is getting firm, we toasted the pumpkin seeds. I’ve done it with raw seeds, and it was fine. Although the taste is subtle, I actually like the flavor the toasted seeds brings to this treat! It only takes 3-4 minutes to toast in a skillet, so why not! Try toasting your seeds before you blend them up.

We decided to make it dairy free, not because we don’t drink milk, but because we love adding coconut milk to our popsicles and smoothies. It’s another great source of nutrients you might not get in cows milk. And we eat plenty of other foods that contain dairy (like cheese), so there is no need to over do it. First we mixed up our ingredients. We used:
  • Pumpkin puree
  • Pumpkin pie spice
  • and honey


Then, we poured the mix into popsicle molds. We let freeze for several hours, or overnight. We did try to freeze a few of the popsicles in stages, so we could put a “layer” of chocolate in the middle, but our layering wasn’t that effective. It was much easier to just drizzle some melted chocolate on after the fact.

We make smoothies for breakfast probably 3-4 times per week. Lately I have been making a berry smoothie with kale that my kids love. The great thing about it is that you can’t taste the kale at all, there is no added sugar, and it is literally just fruits and vegetables. If you haven’t jumped on the kale bandwagon yet, no worries. But I am including this awesome chart of all of the benefits of kale.

I decided this smoothie would make a great popsicle and I was right! Since making them, both my girls have eaten at least one per day. From start to finish they take about 15 minutes to make. Are you skeptical? Are you wondering how they aren’t green at all? Well, read on and you will find out.

All you need is these 4 ingredients and a blender. It does work best if you have a high powered blender. In fact, I would say that is the secret to these pops. Pulverizing the kale. If you don’t have a high powered blender and you are considering making a lot of smoothies, or pops, I would highly recommend investing in one. The first step is to blend the orange juice and kale together. Then add the rest and give it a blend.

And what do you get? A beautiful purple/pink mixture that is sweet and delicious. No green at all. Next step, pour your mixture into your pop mold. If it seems a bit too thick, you can add a little more o.j. Don’t you love those chubby little kid hands? Oh man! Even though my 4 year old spilled everywhere – it was totally worth letting her help. She is just stinkin’ cute.

Summer is winding down for us…….sniff, sniff. This summer has been one of my most fun and mostly because I have done so many things with my kids. Even the days we don’t actually go somewhere to do something fun, I will bust out my lawn chair in the shade, hold my baby and watch my girls ride their scooters or bikes. There is usually a common denominator for these summer days, and that is popsicles. For a long while I was making our own popsicles everyday………and then I had a baby. Dun, dun, dun…………But now that he is six weeks old (I can’t believe it!!) I have gotten back into my usual swing of things. I’m always experimenting with making smoothies and turning them into popsicles. Usually I will just do fruit, but today I decided to live on the wild side and throw some veggies in there. They turned out delicious and kid approved.
